Se aproxima el invierno y nada mejor para alegrar los días de frío y lluvia que un buen plato de cuchara. En Córdoba, al igual que en el resto de Andalucía, las sopas, guisos, estofados, potajes y cocidos se apoderan de los fogones durante los meses de invierno. Las elaboraciones estrella del invierno son los platos de la gastronomía tradicional, esos guisos calentitos y sabrosos que nos transportan a la cocina de nuestras madres y abuelas. Hoy te traemos 5 platos típicos que te ayudarán a combatir el frío este invierno.
- El cocido. Este guiso de garbanzos, carnes y verduras es sin duda uno de los platos que tiene más variantes según la región de España en la que se prepare: madrileño, maragato, montañés…En Andalucía también tenemos nuestra propia versión del cocido con los ingredientes propios de la tierra y con su “pringá”, esa deliciosa mezcla de carnes y tocino que se elaboran junto con el cocido y que se toma aparte con pan. Un verdadero placer para el paladar que tiene su versión en tapa en muchos bares: “los montaditos de pringá”, un mollete de pan con pringá que no deja indiferente ni a los paladares más exigentes.
- El guiso de rabo de toro. Esta elaboración es uno de los platos icono de la gastronomía cordobesa. Se puede encontrar en la carta de bares y restaurantes durante todo el año pero sin duda es un plato que viene muy bien para entrar en calor.
- Las patatas guisadas o estofado de patatas es otro ejemplo claro de plato de invierno. Se suele guisar con ternera, pero también hay versiones con pescado como las gaditanas “papas con choco”.
- Potaje de habichuelas o de lentejas. Los guisos de legumbres y verduras son también grandes aliados para combatir el frío. Las versiones más contundentes añaden chorizo, morcilla u otros embutidos. Eso sí, estos requieren de una siesta después de tomarlos.
- Las migas. Otro plato que con pocos ingredientes: pan, ajo y aceite de oliva nos puede alegrar un día de invierno son las migas. En origen se trata de una receta de aprovechamiento en la que se utiliza pan duro del día anterior. Se pueden acompañar con chorizo y panceta. Una versión más ligera es tomarlas con fruta de temporada: naranjas, granada… e incluso con chocolate para los más golosos…
