Salmorejo cordobés, la auténtica receta cordobesa

 

Mucho se ha escrito sobre cuál es el auténtico salmorejo cordobés, qué ingredientes tiene para cumplir con la tradición y cómo se hace para que el resultado sea “homologado” popularmente. Los secretos de este plato de histórica implantación son diversos, y han sido estudiados concienzudamente. En un intento de rescatarle de una fiebre de reinterpretaciones, deliciosas, pero alejadas en sus raíces. Antiguamente el salmorejo era un plato “de pobres” que se consumía para mitigar el hambre en las clases más necesitadas. Hoy día ha ascendido vertiginosamente en sus expectativas, y se ha convertido en un manjar que no falta en las cartas de los mejores restaurantes, que lo han redibujado con cientos de recetas fantasiosas que sin duda han enriquecido su leyenda.

Pero el verdadero salmorejo cordobés no debe perderse entre esa maraña de vanguardistas versiones. Desde el Departamento de Bromatología y Tecnología de los Alimentos de la Universidad de Córdoba (UCO) se realizó un estudio cuyo objetivo era la de homogeneizar una receta y clarificar sus ingredientes y preparación, y sus conclusiones persiguen dejar clara su esencia.

Para hacerlo al estilo puro cordobés hay que contar con 1 Kg. de tomates, 200 grs. de pan de telera (un tipo especial de pan tradicional cordobés de miga blanca y compacta), 100 grs. de aceite de oliva virgen extra,1 diente de ajo de Montalbán (pueblo de Córdoba) y 10 grs. de sal. Y ahora manos a la obra: se limpian los tomates despegando la piel y retirando las pepitas. Se baten los tomates con la batidora, se cuela el resultado y se añade el pan, el aceite, los ajos y la sal, componiendo una cremosa mezcla. Y ya está listo nuestro salmorejo tradicional para ser decorado con huevo duro picado y trocitos de jamón serrano y disfrutarlo en la mesa.
