El maridaje, dentro del mundo de la gastronomía, se trata de la unión armoniosa entre un alimento y una bebida. El maridaje más popular se realiza con vino, aunque también se pueden realizar maridaje con cerveza e incluso con cócteles y destilados.
¿Cuál es el objetivo del maridaje?
La finalidad del maridaje es combinar las cualidades de la bebida con los ingredientes del plato para crear un equilibrio entre los sabores. Para que el maridaje sea bueno debe realzar lo mejor de cada una de las partes sin que ninguna de ellas anule, enmascare o perjudique a la otra.
Podríamos definir al maridaje como “el arte de combinar alimentos con bebidas”. Y, ¿cualquier comida se puede maridar? Sí. No existe un único plato adecuado para el maridaje. Y respecto a los vinos, ¿qué vino marida mejor? La respuesta a esta pregunta es bien amplia así que vamos a hacer alarde de nuestra tierra. Veamos cómo es el maridaje de los vinos D.O.P. Montilla-Moriles.
Nuestros vinos son muy versátiles y de gran calidad. El sistema de envejecimiento en criaderas y soleras, método de producción característico de los vinos criados “bajo velo de flor”, los convierte en vinos únicos con propiedades organolépticas muy especiales. Dentro de la Denominación de Origen Montilla-Moriles encontramos distintos tipos de vinos y lo más singular es que la mayoría de ellos se obtienen principalmente de una misma variedad de uva, la Pedro Ximénez. Blancos jóvenes o envejecidos, vinos generosos como el Fino, el Amontillado, el Oloroso o Palo Cortado, vinos dulces y naturales como el Pedro Ximénez o el Moscatel… Con tanta variedad las opciones de maridaje pueden ser infinitas. Eso sí, una mala elección del vino puede estropear por completo cualquier experiencia gastronómica.
Por ejemplo, el vino Amontillado, el más complejo de toda la gama de vinos generosos de la D.O.P. Montilla Moriles tiene una enorme personalidad que lo convierte en un vino muy especial para tomarlo y maridarlo. Este vino combina muy bien con arroces, setas, pescados grasos, escabeches y ahumados.
Estos vinos también dan un toque muy especial al cocinado de algunos platos; y son introducidos en numerosas recetas de la cocina tradicional cordobesa como las alcachofas a la montillana, el Rabo de toro al Oloroso Montilla Moriles o el solomillo al Pedro Ximénez.
Los vinos dulces Pedro Ximénez tienen una fama bien merecida como vino de postre, ya que maridan perfectamente con los dulces. En cualquier taberna o restaurante de Córdoba es buena costumbre finalizar la comida ofreciendo una copita de Pedro Ximénez de Montilla-Moriles.
